The combination sounds tasty. Sugar remains after other ingredients in the marinade are boiled off, concentrating the sugar. Probably why it was on the sweet side. Sugar is responsible for the blackening of the drumstick, which is not a bad thing, just something to be aware of.

Could have used much more chipotle. Although, as the marinade was, it may have been better on a pork tenderloin.

Baked it in the oven in the cast iron skillet. I got that skillet about 2 years ago and it is one of the most useful kitchen thingys that I have.

Burnt sugar is tasty on meat. I think it may be better on pork tenderloin because you don’t heed to cook it as long as chicken.
